Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance.

500ML 6.5% ABV This bottle is our ode to the classic spontaneous sours coming out of the Senne Valley and Brussels, Belgium. A blend of one, two and three year old spontaneously fermented, lambic-inspired ales, we brewed TenneSPON Traditionelle with authentic Belgian techniques localized to our corner of Tennessee. Each of the three threads in this sour were brewed with a fully turbid mash, using 60% TN-grown barley and 40% raw wheat. After a three hour boil with aged noble hops, we transferred the wort to our coolship to cool overnight and collect local microflora. The next morning, we laid the beer to rest in neutral barrels and let it ferment with its naturally occurring yeast. TenneSPON Traditionelle has a very pleasant citrusy lemon profile with nice acidity and tartness, slight minerality, and a layered, nuanced funk balanced by a dry mouthfeel. Corked and capped, we only packaged 888 bottles of our very first geuze-inspired sour.

We started off with a decadent base stout before conditioning it on Bolivian cacao, toasted coconut from our Bonfire Kitchen, and Ghostbear coffee from our friends at Mostra Coffee. Pouring dark and viscous with a mocha cap, it releases potent notes of high end Bakers chocolate, shredded coconut, and your favorite coffee shop. Each luscious sip has a big and full viscous mouthfeel with rich, sweet, and decadent flavors of chocolate syrup, chocolate covered snowballs, and a full roastiness from the coffee.

375ml bottle 6% abv Wild Ale Tepache Inspired Wild Ale with Pineapple and Cinnamon Inspired by the spontaneously fermented Mexican beverage, Tepache. We fermented our golden sour base beer with a mixed culture of Brettanomyces and resident microflora present on the skins of pineapples. After primary fermentation was complete, we re-fermented and conditioned this beer with 400l of pressed pineapple juice, molasses sugar and whole Ceylon cinnamon. Drink young or age, this will get weirder.

The second iteration of this beer is aged for four months, and packaged completely unfruited and unhopped to showcase the flavour characteristics of the mixed culture. We get super juicy stone and tropical fruits including passionfruit, pineapple, citrus and candied apricots

375ml bottle 6% abv Wild Ale Tepache Inspired Wild Ale with Pineapple and Cinnamon Inspired by the spontaneously fermented Mexican beverage, Tepache. We fermented our golden sour base beer with a mixed culture of Brettanomyces and resident microflora present on the skins of pineapples. After primary fermentation was complete, we re-fermented and conditioned this beer with 400l of pressed pineapple juice, molasses sugar and whole Ceylon cinnamon. Drink young or age, this will get weirder.
